Introduction

In our family we can't eat mashed potatoes any other way. These are definitely not diet mashed potatoes, but are very satisfying even when you only have 1/2 a serving. I save up my calories for these and allow myself to enjoy them. I hope you will too! In our family we can't eat mashed potatoes any other way. Ingredients

    15 Medium Red Potatoes
    2 tsp Salt
    1/2 cup Whole Milk
    6 tbsp Shredded Parmesan Cheese
    1 tbsp Sour Cream
    1 tbsp Light Butter

Directions

For added fiber, leave the skins on the potatoes. Wash them and cut in small pieces so they cook faster. Add salt to the pot, so that it absorbs as the potatoes boil. When the potatoes are done, drain them, put in a mixer and add the rest of the ingredients. Mix well and serve.
