Ingredients

    Beef Chuck Roast, cubed
    1 cup or can of low fat beef broth
    1 cup of raw onions
    3 garlic cloves, coarsely chopped
    1 cup of red bell peppers, chopped
    2 large potatoes, cubed
    2 cups of frozen peas and carrots
    2 cups of mushrooms, pieces and stems
    1 cup of sweet corn
    1 tsp of black pepper or to tast
    1 bay leaf, discard after cooking
    1 tsp of whole all spice, remove after cooking

Directions

cut up beef, bell pepper, potatoes,and onions, place all ingredients into slow cooker. cover with water and slow cook at 230 degrees from 4 to 8 hours
serves 4 - 2cup servings
