Ingredients

12 of 4 inch round angel food mini cakes ( 45 gr per each full cake - sliced in half sideways for serving )
48 oz fresh strawberries - each one sliced
24 oz Kiwi fruit - peeled & sliced thinly
1/2 cup Splenda
2 tbsp lemon juice
16 oz of 72% Dark chocolate
Tips
The 120 minute " Cooking time " is the ideal time that it takes to maserate the Fresh Strawberries! The only " cooking " is the melting of the 72% dark chocolate.
Directions
Makes 24 very nice servings!
Hull & then slice your fresh strawberries thinly.
Blend 2 tbsp of lemon juice with the 1/2c of Splenda & maserate the strawberry slices for up to 2 hours in fridge.
Slice your 4 inch mini angel food cakes in 1/2 sideways and place in your serving dishes.
Place maserated strawberry pieces & kiwi slices around cake sections & use a little of the juice created by the maseration on each one. Using a dbl boiler or bain marie on low heat, melt 100% of your 72% Dark Chocolate.
Here is where I get LAZY! I use the spray tins ( 225gr size ) of Lite Cool Whip & place a serving on top of each cake piece with a little more of the reserved juice. ( conversely, you could whip up 900 gr of Lite Cool Whip )
Finally! Using a tbsp, drizzle over top of each serving the melted 72% Dark Chocolate and ENJOY!!
