    12 ounces fresh or frozen skinless salmon filets
    2 1/4 cup or 8 ounces whole wheat pasta
    2 cloves or garlic, minced
    Nonstick cooking spray
    4 large tomatoes, chopped
    1 cup sliced green onions
    5 sliced olives
    3 tbsp snipped fresh basil
    1/2 tsp coarsly ground black pepper
    2 tsp olive oil
    1/4 cup feta cheese


Rinse fish, pat dry. Cut into 1 inch pieces.

Cook pasta according to directions on box.

Lightly coat a large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add garlic. Cook and stir for about 15 seconds. Lightly season fish pieces with salt. Add fish to skillet.

Cook fish for 4 to 6 minutes or until fish flakes easily when tested with a fork, turn fish pieces occasionally.

Stir in tomatoes, green onions, olives, basil, and pepper. Heat through

In a large bowl, toss together hot pasts, olive oil, salmon mixture, and cheese.

    I've been wanting to eat pasta again ever since I started watching my calories, and this was a great first choice. Good for people looking to sneak more fish into their diet. - 10/18/09

  • This recipe is a great way to combine healthy protein, preferred carbs and a tasty variety of dairy and vegetables. I opted for some smoked salmon and thought it added a wonderful dimension to the flavors. Will definitely keep this for entertaining my pescatarian friends.
