Introduction
I found these on a web site, someone else had tweaked the original recipe to perfection. I made mini muffins with the first batch and plan to make big muffins next. Ingredients

3/4 c. fat free milk
1/2 c. natural applesauce
1 egg
1 tsp. vanilla
Mix above ingredients together in a small bowl
1/2 c. all purpose flour
1/2 c. whole wheat flour
1/2 c. rolled oats
1/2 c. cornmeal
1/2 c. brown sugar
3 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
zest of 1 lemon
Mix dry ingredients with a fork in a med size bowl.
Directions
Make a well in the dry ingredients bowl and pour wet into it.
Stir with a spoon just until flour is moistened (batter will be lumpy). Fold in blueberries. Spray muffin tin or use liners.
Oven temp at 400 degrees. Mini muffins cook in 10 min.
makes 36 mini muffins or 12 full size muffins, cook for 18 min. Immediately remove from pan to cool.
