This is a little twist on the classic carrot and raisin salad. This is a little twist on the classic carrot and raisin salad.

Ingredients

    2 cups grated carrot
    2 cups grated beets (raw); about one large beet
    .5 cup raisins, packed
    .25 cup walnut pieces
    4 Tbsp light mayo (or plain yogurt--to lower calories even more)
    .25 cup lemon juice
    2 tsp Splenda (optional)

Directions

Grate carrots and raw beets.

Toss grated veggies with raisins, walnuts, mayo, lemon juice and Splenda.
