Introduction
Serve this thick, hearty stew over rice for a wonderful play on the traditional Indian dish Chole, or Chana Masala. I've taken the standard chickpea curry and lightened it up with playful spices and a chunkier, rather than soupy constitution (think pico de gallo vs. picante sauce). Ingredients

olive oil
4 cloves garlic
1 sweet onion (medium size)
3 cups chickpeas
1 can petite diced tomatoes
2 Tbs Harissa
1/2 block frozen spinach (5 oz)
marjoram, garlic powder, turmeric, ginger, coriander, and fenugreek to taste (roughly 1/4-1/2 tsp of each)
2 Tbs lemon juice
1/4 Cup coconut water
Directions
Heat olive oil over medium-low until a sprinkle of water sizzles in your saucepot. Add garlic and onion and saute until golden, about 3-5 minutes. Add tomatoes and simmer 5 minutes. Add chickpeas and increase heat to medium-high. Add spinach and stir until combined. Reduce heat to low and cover pot. Cook ten minutes, then add spices. Cook an additional ten minutes, then stir in coconut water and lemon juice. Simmer three minutes. Adjust spices as needed, and serve.
Serve family-style with a fluffy rice such as jasmine or basmati. Creates roughly 4 bowls of stew.
