Introduction

Living a low carb, higher protein lifestyle does not mean you have to forfit muffins!!!! Living a low carb, higher protein lifestyle does not mean you have to forfit muffins!!!!

Ingredients

    1/4c Almond Meal
    1.4 t Baking Powder
    1 EGG White
    1T Sugar Free Syrup
    Cinnamon, Nutmeg, or BOTH to taste
    6 Frozen Blueberries (or any type of frozen fruit)

Directions

Mix all dry ingredence in a small bowl, then add wet. Mix with fork just until egg white has been fully distributed. Transfer to a large coffee mug that has been sprayed with non-stick cooking spray and microwave for 1 min 20 seconds.

Top with a small pat of butter (if desired) and Sugar Free Syrup (if desired)
