Introduction

This is a salad I have been making for my family for 50 years. Any chopped raw vegetables can be added. I often add cucumbers and squash if I have them. I serve it on a bed of baby lettuce. Ingredients

    1 can chunk white tuna
    1 cup macaroni shells uncooked
    2 cups chopped celery
    .5 cup chopped onion
    1 cup cherry tomatoes (cut in half)
    .5 cup chopped carrots
    app. 1/8 pkg. dry Italian salad dressing mix (2 tbs)
    .5 cup yellow, red, or green bell pepper
    5 tbs light Mayonnaise

Directions

Cook 1 cup macaroni in 4 cups water for 10-12 min. Drain and rinse set aside. Drain white tuna and mix in large bowl with chopped vegetables, add macaroni, 5 tbs mayonnaise, and 2 tbs dry Italian salad dressing mix and refrigerate. Serve when chilled. (I often skip this step if I am in a hurry, but this salad gets better as it chills and is good for several days. Serves 4 (1.5 cup servings)
