Ingredients

    1 medium cabbage shredded
    1 medium onion diced
    1/2 cup brown rice
    1 tablespoon olive oil
    2 thinly sliced potatos raw
    2 cups vegetarian broth
    1/2 cup romano or other hard cheese
    salt and pepper if desired

Directions

Put rice in small microwave safe dish with 1 cup broth microwave 1 minute on high. then 15 minutes on lowest setting.Meanwhile saute minced onion. Shred cabbage . add cabbage to onions saute until softened about 5 minutes. Mix and place cabbage and onions in greased casserole dish, about a 2 quart dish. slice potatoes very thinly cover cabbage with a layer of potatoes. Spread rice over cabbage pour in remaining liquid and another cupof hot broth. Use salt and pepper if desired. Sprinkle with grated cheese. Cover abd bake at 350 for 25 minutes. If dry sprinkle with boiling water. Serves 4 generously.
