Ingredients

6 med potatoes
8 oz shredded reduced fat sharp cheddar cheese
1 can 98% fat free cream of chicken soup
1 cup fat-free plain yogurt
3/4 cup evaporated skim milk
1/2 cup fineley chopped onion
2 cups cornflakes
Directions
Preheat oven to 350 degrees. Spray a 10"x9" baking dish with EVOO or non stick spray. In a blender or food processor, process the corn flakes into coarse crumbs. (or place in a large plastic bag and roll with rolling pin)
In a large bowl mix the cheese, soup, yogurt, milk, and onions together. Coarsely shred the potatoes (I use my Pampered Chef food chopper) and stir them into the soup mixture.
Transfer the mixture into the baking dish. Top with the cornflakes.
bake for 1 hour or until the potatoes are tender.
I believe this will make about 12 1 cup servings. I havent made this version yet but have made the regular fat one many times and get from 12-15 servings out of that.
