Introduction

A nice vegan taco filling A nice vegan taco filling
Number of Servings: 8

Ingredients

    One 15 ounce can of cannelloni beans (drained and rinsed)
    two red bell peppers diced
    one yellow bell pepper diced
    one orange bell pepper diced
    two shallots sliced thin
    a small bunch of cilantro - just the tops, snipped into the pot
    Olive oil to sautee the whole thing, approximately 4 tablespoons
    some salt to taste

Directions

Makes 8 half cup servings.
put the oil in a pot, sautee the shallot, peppers and garlic until they are done to your liking. sprinkle the salt into the mixture to taste, add the cilantro and mix well. Toss in the beans and gently toss together until the beans are warmed through.
Serve on corn tortillas as a vegan taco.
