Ingredients

    1 T. Olive oil
    1 medium onion- chopped (approximately 1 cup)
    2 or 3 cloves garlic, minced
    32 oz. Chicken Stock
    4 C. water
    2 C. chopped mustard greens
    2 C. chopped turnip greens
    2 15oz.- cans Great Northern Beans
    1 pkg dried vegetable soup mix (I use Knorr)
    1 t. Tabasco
    1 T. Sugar
    1/2 t. salt (optional)
    1/2 t. pepper
    1 lb. Lean (5%) Ham, chopped
    1/4 C. parsley



Directions

In a large saucepan, sauté' onion and garlic in olive oil until tender (approximately 4 minutes).Add remaining ingredients except parsley. Cook for 30 minutes over medium heat, stirring occasionally. Stir in parsley, simmer for another hour or so. Serve with cornbread.

Makes 10 (1 cup) servings parsley
