New recipe that borrows from some others but made with my family's tastes in mind. It is spicy as I made it. You can reduce the amount of red curry paste to suit your specific tastes. Number of Servings: 14

Ingredients

    10 ounces chicken breast meat
    1 cup diced onion
    1 cup chopped sweet red pepper
    1 cup chopped green pepper
    1 cup chopped carrots
    1 cup chopped celery
    1 package red curry paste
    2 Tbsp garlic
    2 Tbsp olive oil
    .5 cup coconut milk light
    2 Tbsp flour

Directions

Heat olive oil in large stock pot. Add onion and garlic and saute, then add other vegetables and chicken and saute. Add curry paste and mix well

Add chicken broth, 2 cups water and lentils and simmer until letils are tender. Whisk 2 Tbsp flour into half cup of coconut milk and add to pot. Cook for 10-15 minutes.

Makes around 14 half cup servings. I serve with homemade fresh spring rolls.
