This mashed potato recipe will be sure to please the masses! The skin is left on these potatoes, giving the dish extra nutrients and that rustic quality. Ingredients

10 medium Yukon Gold Potatoes (leaving skin on)
1/2 tsp Minced Garlic
1/2 tsp Freshly Ground Black Pepper
8 tbsp fat free sour cream
3 tbsp I can't believe it's not butter (regular used for recipe)
1/4 cup of potato water (after taters are boiled)
Directions
wash the potatoes thoroughly and cut off any undesired or damaged skin. Cut potatoes in quarters and put in a large stock pot with water to cover. Put the pot on the stove on high or medium high to cook until just fork tender. (make sure you don't overcook them as they taste better when they are firmer) When potatoes are done then scoop out a 1/4 cup of the water before draining the pot.
In a large bowl put potatoes, sour cream, margarine and the water that was held aside earlier.
Depending on your desired consistency use either a hand masher (more rustic) or a mixer (more whipped consistency) ( I used a stand mixer)
While mashing the potatoes add the garlic and pepper. Depending on desired taste you can also add finely chopped celery to this recipe and it tastes amazing. This recipe was calculated without it though. Garnish with chives or parsley. Enjoy!
