Introduction

Number of Servings: 16

Ingredients

    1 C rice, cooked
    20 oz crushed pineapple, retain juice
    1 large banana, sliced 1/2" thick (optional)
    1 pack Jell-O instant banana pudding
    8 oz sour cream
    16 oz cottage cheese, small curd
    8 oz Cool Whip, thawed
    2 cans Mandarin Orange segments (11 oz, EA), drained
    1 can pear chunks, drained (optional)
    1 can peach chunks, drained (optional)
    2 C fresh blueberries (optional, but highly recommended)

Directions

1. Prepare one cup cooked rice. Spread on plate and allow to cool
2. Drain orange segments and pat dry on paper towel
3. In a large mixing bowl, put crushed pineapple with juice. If using fresh banana slices, put in now and toss gently with the pineapple to prevent browning bananas
4. Add dry banana pudding mix to pineapple/banana mixture and gently mix. Fold in cottage cheese, sour cream and then Cool Whip. Fold in cooled rice and all other fruit segments, except blueberries. Chill in the refrigerator for a couple hours or overnight.
5. Just before serving, top with fresh blueberries or other fresh fruit such as cantaloupe, bananas, strawberries, grapes or kiwi. Unless you're using banana with the crushed pineapple, the dish keeps better if fresh fruits are used for toppings just before serving.

    This recipe was absolutely delicious!! I used lowfat cool whip, light sour cream, and sugar-free banana pudding and it was still amazing! The only thing I would do differently is add another banana because I am a huge banana fan. - 9/15/10
