Number of Servings: 8

Ingredients

    1 Cup Dry Lentils
    5 Carrots, chopped
    3 Stalks of Celery, diced
    One Medium Onion, chopped
    2 Fresh Cloves of Garlic, chopped
    One 32 oz container of Chicken Broth (fat free, low sodium)
    One can of diced tomatoes (packed in tomato juice, no sugar added)
    One can of sweet peas (no salt added)

Directions

Chop garlic cloves, onion, celery and carrots and dump into crock pot.
Dump dry lentils into crock pot.
Open cans of tomatoes and peas and dump into crock pot.
Pour chicken broth into crock pot.
Add basil, parsley, salt and pepper into crock pot.

Stir.

Turn crock pot to "high" and let cook for at least 4 hours or until lentils are soft.

Makes about 8 one-cup servings.

Serve with whole-grain brown rice.

    Very Good
    This has been great to make on Sunday's eat packaged to eat for lunch. I also add some cayenne pepper about an hour before I pull it out of the crockpot and it adds a nice little kick! - 6/7/11
