Ingredients

    25g butter
    1 medium onion
    550g carrots of which 450g roughly chopped and 100g coarsely grated
    1 litre of vegetable stock
    a pinch of freshly grated nutmeg
    1 tablespoon of chopped fresh corriander
    150ml single cream (not on the calorie count)
    salt and pepper

Directions

1. Melt the butter and cook the onion and garlic gently until soft in a covered sauce pan
2. Add the roughly chopped carrots, stock and nutmeg. Then cover and bring to the boil
3. When boiling, simmer gently until the vegetables are tender.
4. Leave and cool for a bit, before liquidizing. Stir in the grated carrots, corriander and cream. Taste, season and enjoy!
