Introduction

A low fat, baked version of Buffalo wings. A low fat, baked version of Buffalo wings.

Ingredients

    4 Wings- halved = 8 pcs.
    3 TBS Hot Sauce (Texas Pete) any brand
    1 (-/+) TBS Corn Starch
    1-3 TBS BBQ Sauce (use favorite)

Directions

Cut you wings into 2 sections, prick with fork all over each wing. (4 wings will give you 8 pieces)

Put into container and add hot sauce, roll to cover wings; cover and set in refrigerator, from 2 hours to overnight. Turn once or twice to be sure they are all marinating in the hot sauce- the pricking lets the hot sauce get into wing meat.

Remove wings from the hot sauce and whisk in the cornstarch, place wings back in sauce to coat.

Preheat oven to 450 °. Line or spray cookie sheet pan set a sprayed cooling rack on the sheet pan, arrange wings on the rack. Bake at 450° for 10 minutes, reduce heat to 350°, baste with BBQ sauce and continue for 20 minutes or until wings are done.

The cornstarch in the hot sauce will thicken and coat the wings well and combined with the high baking temperature will give them a nice crisp exterior. Basting with your favorite BBQ flavor will insure that they are a flavor you enjoy. You won't even miss that they have not been deep-fried.

    This recipe allowed me to enjoy football playoffs with everyone else without feeling left out of the football food. It is a great healthy alternitive to a great football season snack. - 1/20/08
