Ingredients

    3 oz. chicken
    1 onion
    1 carrot
    3-5 dried shiitake mushrooms
    3.5 oz. lotus root
    3.5 oz. burdock root
    3.5 oz. bamboo shoot (boiled)
    3.5 oz. konnyaku
    1 tbsp vegetable oil
    1 tbsp sugar
    2 tbsp mirin
    2 tbsp soy sauce

Directions

Cut the chicken into bite size pieces. Soak the shiitake in 100ml water for 10 minutes, remove the stems and cut into 6mm cubes. Reserve the soaking water.
Cut all the vegetables into bite-sized pieces. Soak the burdock root and lotus root in vinegared water for 5-10 minutes. Boil the konnyaku for 1-2 minutes.
Heat the oil in a deep pan and stir-fry the chicken, carrots and onions. Then add all the vegetables pour in the shiitake soaking water and bring to the boil.
Simmer for 30 mintues. Add remaining ingredients.
