Introduction

Easy topping for simple white fish (tilapia, orange roughy, cod, etc...) and rice. Easy topping for simple white fish (tilapia, orange roughy, cod, etc...) and rice.
Number of Servings: 5

Ingredients

    1 14-oz. can cut up tomatoes
    1 cup chopped green pepper
    3/4 cup chopped onion
    1 teaspoon dehydrated onion
    (favorite white fish)
    (cooked rice)

Directions

Simmer together the tomatoes, green pepper, onion, and dehydrated garlic for about 30 minutes or longer if you wish. Makes about 2-1/2 cups veggie topping or 5 servings of 1/2 cup each.

While topping is cooking prepare some rice and your favorite white fish (grilled, or broiled). Serve topping over fish and rice.

    Very Good
    Wow -- This really added to plain old white fish -- I used Tilapia. BTW I think you meant dehydrated GARLIC instead of onion. Anyway that's what I used. - 1/16/11
