Introduction

Ingredients

    1.5 cups cooked black beans
    2 cups leek, sliced
    1 cup sliced carrots
    2 cups diced sweet potato
    3 cups vegetable broth
    3 bay leaves
    2 tsp hot pepper sauce

    Feel free to spice it up more- add thyme or cumin maybe, and salt if it fits your dietary needs...

Directions

Prep the vegetables.
Combine all ingredients in a 2 qt saucepan.
Bring to a boil and simmer until the sweet potato is fork tender.
Enjoy!

    instead of making a soup I omitted the broth and added rice and rolled it up into a burrito - 10/20/10
