Introduction

A nice hearty soup, the flavors of the tahini and peanut butter bring out the sweetness of the collards while the lemon, red pepper and ginger give it some zing. Optionally the chicken can be left out to make it vegetarian. The recipe is very versatile, feel free to play with it. Ingredients

    6 cups chopped Collard Greens
    1 cup grated carrot
    2 medium tomatos diced
    1 cup chickpeas/garbonzo beans (i prefer taking the shell off of them, but thats up to you)
    1 medium onion, diced
    3 garlic cloves, fine
    1 tsp. grated ginger root
    2 tbsp lemon juice
    dash of salt
    1/2 tsp cayenne pepper
    10 oz. cooked chicken breast, cut into pieces
    6 cups vegetable broth
    4tbsp peanut butter
    4 tbsp tahini/sesame paste
    1tbsp olive oil

Directions

In a big soup pot, saute onion and garlic until transluscent. Add vegetable stock, then all other ingrediants except for peanut butter and tahini. Bring to a boil, reduce heat and simmer for 15 - 20 minutes, stirring occasionaly. Turn off heat, carefully add peanut butter and tahini, stir until they melt. Makes 8 servings of 1 cup.
