Ingredients

2 Tbs. Olive Oil
5-6 Boneless, skinless, chicken breast tenders, diced
1 large onion, diced
2 Tbs. garlic, diced (about 6 cloves)
2-3 Zucchini, diced
1 Summer squash, diced
1 bell pepper, diced (any color is fine)
1 1/2 C. frozen peas
1 large can crushed tomatoes
3 Tbs. vegetable broth base
16 C. Water (approx.)
1 tsp. salt
.5 tsp. pepper
.25 tsp. cayenne pepper
1 tsp. Mrs. Dash Garlic and Herb Seasoning
Directions
Heat olive oil in bottom of large soup pot. Cook chicken tenders, remove from heat and dice. Add onions, garlic, and carrots. Saute till onion is transparent and carrots have begun to soften, about 10 minutes. Add the rest of the vegetables (except for canned tomatoes) and about 1 cup of water and cover to steam about 15 minutes, stirring occasionally. Add broth base, water, canned tomatoes, and seasoning. Cover and bring to a boil, then reduce heat an simmer for about 1 hour. Makes 16, 1-cup servings.
