My daughter loves tomato-basil soup, and I decided to try making some. I couldn't find a recipe I liked without cream, so I mixed and matched until I came up with this. Number of Servings: 6

Ingredients

    2 t olive oil
    3 cloves garlic, minced
    4 C vegetable broth
    6 med tomatoes, seeded and chopped
    1/2 C chopped carrots
    1/2 C chopped onion
    1 C fresh basil leaves, loosely packed, chopped
    3 T tomato paste

Directions

Makes 6 1-cup servings

Heat the olive oil over medium heat. Add the garlic and cook for 30 seconds, stirring constantly. Add the broth, tomatoes, carrots and onion. Bring to a boil. Reduce heat and simmer until carrots are soft (about 15-20 min). Stir in basil. Run soup through a blender in batches until smooth. Return to pot and stir in tomato paste. Serve immediately.
