Ingredients

1 1/2 cups Cranberries, fresh or frozen cut in half.
1/2 cup Granulated Sugar
1 larg Egg, fresh
1/2 cup Milk, 2%
1/2 cup Orange Juice
2 Tblsp Canola Oil
1 Tblsp Orange Zest
2 cups King Arthur All Purpose Flour
3 tsp Baking Powder
1 tsp Kosher Salt
Directions
Heat oven to 385 for convection - 400 for regular oven.
Halve the fresh or frozen cranberries (1.5 cups) and add 1/2 cup of sugar.
In another bowl beat 1 egg, add milk, orange juice, orange zest, and oil.
Add Flour, Baking Powder, and salt.
Mix all together until moistened batter will be lumpy.
Carefully fold in the cranberry-sugar mixture.
Put pepper liners in muffin tins and fill 2/3 full.
Bake 15-20 minutes until toothpick inserted in center comes out clean.
Makes 12 medium muffins.
