Ingredients

    1 large sweet potato, baked
    1 yam
    1/2 c. brown sugar
    12 oz evaporated milk
    3 small bananas
    1 graham cracker pie crust
    About 15 marshmallows, cut in half
    1 tbsp. cinnamon, ground
    1 tsp. salt
    1 egg
    2 tbsp. butter

Directions

Blend bananas, egg, sweet potato and yam in blender until smooth. Add butter, salt, cinnamon, evaporated milk and brown sugar, and blend again. Pour into prepared graham cracker crust. Bake at 350 Degrees F for 40 minutes. About 15 minutes before its done baking, open the oven and arrange marshmallows on top of the pie to cover.

    Incredible!
    I made this over Thanksgiving along with 5 other pies. I was concerned that there would be too much banana flavor, but this pie kicked a**! Will definitely make again! - 12/22/10

    Very good!! You can cut some calories/fat by using fat free evaporated milk & fat free cool whip in place of the marshmallows. And I always use Smart Balance butter on/in everything. It's great either way! - 11/14/10
