Introduction
This recipe was given to her by her good friend. They are the lightest matzo balls and were always made with love. They are worth the wait. This recipe was given to her by her good friend. Ingredients

3 large eggs (separatrd)
scant 3/4 cup matzo meal
Kosher salt to salt water
Directions
Mix 3 egg yolks until light and frothy and the yolk color has lightenen.
Whip 3 egg yolks until they have soft peaks.
Gently fold egg yolks into egg whites.
Gently mix in matzo meal.
Place in refridgerator for about 15 minutes or while you wait for water to boil.
Make matzo balls using about 1 Tbs to 1.5 Tbs matzo mixture. Gently roll into a ball. To help stop mixture from sticking either lightly oil your hands ot moisten hands in ice water.
Gently drop balls in lightly salted boiling water.
Reduce heat and simmer for 20 minutes.
FYI--The matzo balls almost double in size when cooked.
Add to chicken soup.
