Introduction

A quinoa variation on a Greek orzo pasta salad. A quinoa variation on a Greek orzo pasta salad.
Number of Servings: 8

Ingredients

    3 cups prepared quinoa (following package directions)
    1 can (14 oz) quartered artichoke hearts
    4 oz fat-fee feta cheese, crumbled
    1/2 cup pitted kalamata olives.
    1 1/2 tsp oregano
    2 tbsp olive oil
    2 tbsp lemon juice
    salt and pepper to taste

Directions

In a bowl, combine the quinoa, artichoke hearts, feta cheese and olives. Toss to combine.

In a different bowl, combine the olive oil, lemon juice, oregano, a pinch of salt and a couple grinds of pepper.

Pour the dressing over the quinoa mixture and toss to combine.

Makes 8 servings

    Very Good
    This recipe was pretty much just what I was looking for. I would have appreciated if it said to cool the quinoa or not, but since I was in a hurry it might not have mattered. I tossed the hot quinoa with the cold ingredients and added spinach, and the kids liked it. - 8/14/13

    I don't really think it matters to the finished product if the quinoa is hot or cold. I have done it both ways, depending on if I was planning to eat it cold or hot.
