Introduction

This isn't authentic, but it's a really tasty casserole. I use tortilla chips for ease. ETA: Changed # of servings from 4 to 6. You could probably get even more with a salad and a side dish. Ingredients

    2 tbsp. veggie oil
    2 c. chopped onion
    2 bell peppers, chopped
    8 corn tortillas, baked and broken into pieces, or a med. bag of tortilla chips (my preference)
    4 c. refried beans
    1/3 cup chopped Spanish olives (opt)
    2 cups hot sauce (I use chunky salsa)
    1 c. grated sharp cheddar

Directions

Saute onions and peppers until translucent.
Grease 9x13 pan, line pan with tortillas.
Add refried beans in a layer on top of tortillas.
Add sauted vegetables.
Add olives, if using (please do!)
Add salsa, and top with cheese.
Bake covered at 375F for 25-35 min, uncover and bake another 10 min, or until cheese is blubbly.

Serves 4-6.

    Very Good
    I really liked this recipe. Very easy to prepare and pop into the oven. I didn't make it very spicy as I am the only one who likes a bite back. I used mild salsa and it was still very tasty. - 8/27/07
