Ingredients

    2 Gala Apples, peeled and diced
    1/2 cup brown sugar
    1/4 cup white sugar
    1 cup unsweetened applesauce
    2 eggs, lightly beaten
    1 tbsp vanilla extract
    1 1/2 cup flour
    1/2 tsp salt
    1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp apple pie spice
    1 tsp cinnamon

Directions

1. Preheat oven to 400 degrees F.

2. Whisk together eggs, vanilla, sugars, and applesauce. Add dry ingredients and mix with spatula until just encorporated.

3. Fold in apples and mix until just mixed. Pour batter into greased rectangular bread pan.

4. Bake for 45 minutes, or until toothpick or cake tester inserted into center comes out clean. Allow to cool in pan for 20-30 minutes before removing. Slice into 10-12 slices.

Will keep up to 1 week in an airtight container.
