Ingredients

    2 tsp Cinnamon
    1 tsp cloves
    1 tsp ginger
    1 Tbs vanilla extract
    3 cups old fashioned oats
    1 1/4 cup whole wheat flour
    1 cup brown sugar
    1 cup splenda
    1 cup pumpkin
    1 tsp baking soda
    3 cups shredded coconut
    1/3 cup chopped pecans

Directions

Makes about 48 balls.
Cream pumpkin, spices and sugar. Add oats, flour, baking soda, pecans and coconut. Mix well.
Form 1 Tablespoon-sized balls and place on a greased baking pan. Bake for 12-15 minutes on 350*.

    I don't like cloves so I'd leave that spice out but these sound like something I'd like to try. I just printed out the recipe so I can remember to buy some ingredients I don't have and make these. - 10/27/10
