Introduction

That's right, slow cooked big turkey meatballs stuffed with apples and wrapped in turkey bacon. So much better for you then you think! That's right, slow cooked big turkey meatballs stuffed with apples and wrapped in turkey bacon. So much better for you then you think!

Ingredients

    Turkey, Ground turkey, 93% lean, 16 oz (1 lb)
    Food Lion turkey bacon, 12 slices
    Apple - Fresh medium size Peeled and chopped
    Onion (Yellow), 1 med, raw, 1/2 chopped
    Garlic Powder, .5 tsp
    kosher salt, 1 tsp
    Pepper, black, .5 tsp
    Egg, fresh, 1 large
    Extra Light Olive Oil, 1 tbsp
    2 oz Cabot 75% reduced fat cheddar cheese. (optional but included in our calorie count)

Directions

This all goes in your 4 quart slow cooker for 4-6 hours depending if you have it on low or high. High = 4 hrs Low=6 check every 30 minutes after 3 hours though. You may have to turn your meatballs.

Turn crockpot on low (or high) and heat for about 5 minutes. Then, line your crockpot with 6 slices of the turkey bacon.

So, in a large bowl mix ground turkey with all the spices, egg, cheese, chopped apple & onion. Mix through with hands. Shape into 6 large meat balls.

Wrap each meatball with a slice of the last 6 slices of turkey bacon. Add extra black pepper on top if you want. Add into your already heated crockpot. Put your top on and wait. After 3 hours check them and turn the if needed. They will be a lovely brown and crisping on the outside when done. An internal temp of 155 is what you are looking for in your meatballs.

Put over rice if you would like. I just like to serve with a side of green beans.
