Introduction

Just a little recipe I made up because I love fried zucchini! Enjoy! Just a little recipe I made up because I love fried zucchini! Enjoy!

Ingredients

    1 Cup Zucchini (sliced into "buttons")
    10 sprays I Can't Believe It's Not Butter Original Spray
    1/2 tsp garlic powder
    1/2 tsp oregano
    1/2 Tbsp yellow corn meal (I use Quaker brand)
    1 tsp extra virgin olive oil

Directions

Makes a single serving.
Preheat broiler.
Spray a small baking sheet or aluminum foil with 10 sprays of I Can't Believe It's Not Butter Spray.
Slice zucchini into small, thin "buttons" and place them on sheet. Place a small dot of olive oil onto each button and spread it around. Sprinkle with garlic powder, oregano and corn meal. Place into broiler and cook up to 25 minutes. (Cook time may vary depending on oven)

    if you cook them for 25 minutes under a broiler you will have nothing left but charcoal - 2/2/12
