Ingredients

    2 T. peanut oil
    1/2 cup onion, chopped
    1 1/2 cup cooked brown rice
    2 cups carrots, shredded
    1 1/2 cup nappa cabbage, shredded
    1/4 cup canned , sliced water chestnuts, rinced and drained
    2 T. Braggs liquid aminos
    2 lrg. eggs
    1/2 cup frozen peas
    1/2 cup frozen corn
    1/2 cup fresh bean sprouts
    12 oz. broiled lean sirloin, diced

Directions

1.In a large nonstick skillet, heat oil; add onion and cook over medium heat until softened, about 2 minutes. Stir in rice, carrots, cabbage, water chestnuts, and Braggs liquid aminos; cover and cook over med- high heat 5 minutes. 2.Meanwhile, spray medium non-stick skillet with nonstick spray; add eggs and scramble over medium heat, stirring frequently, until eggs are firm, about 2 minutes set aside.
3. Stir peas, corn and bean sprouts into rice mixture. cover and cook over medium-high heat 3 minutes. Stir in scrambled eggs and diced sirloin; cook, stirring occasionally, until meat is heated through, about 2 minutes.
