Introduction

This is a vegan and gluten free soup. It is hearty and very filling. It also makes a ton! So its a great go to meal in a pot to keep in the fridge for the week or freeze. Ingredients

    2 onions, chopped
    5 stalks celery, chopped
    5 carrots, peeled, chopped
    1 head of garlic, minced
    1 tbsp olive oil
    2 cans muir glen diced tomatoes w/ garlic and basil
    1 box Pacific's roasted tomato soup
    1.5 boxes Pacific's low sodium Veg. broth
    1.5 cup frozen peas
    1.5 c frozen green beans
    1.5c frozen brocholi
    1.5c. frozen califlower
    1 pkg. frozen spinach
    1 c frozen mixed bell peppers
    1.5 pkg of dried 15 mixed beans, soaked and washed
    1 tbsp Thyme
    1 tbsp Oregano
    4 tbsp basil
    salt, opt. I used 3 tsp
    pepper, opt. I used 2 tsp
    Italian herb seasoning (I used 1 tbsp ea. T.S. Sweet bell pepper and Garlic, basil pesto)
    1 tbsp red pepper flakes

Directions

makes 18 1.5 cup servings.
soak beans overnight.
Saute onion, celery, carrot, and garlic with seasonings in olive oil. Add tomatoes, soup and broth. Add the rest of the ing. stir often for 2 hrs.
