Introduction

This is a nice summer salsa that can be used with chips or topping for bugers or fish. If making in winter can substitute 1 1/2 cups frozen corn. Also need to add 1/2 t. ground cumin and optional is 1/2 t. of red pepper flakes. This is a nice summer salsa that can be used with chips or topping for bugers or fish. Ingredients

    3 medium ears of fresh corn
    1 avocado, cubed
    1/2 cup of chopped scallion
    1 garlic glove minced
    1/2 t. of salt
    1/4 t. of pepper
    1/2 t. of cumin
    1/2 t. of red pepper flakes (optional)
    2 T. of fresh lime juice
    2 T. of cilantro chopped
    1 t. of sugar (optional)

Directions

Roast corn on grill till some kernels turn brown or roast in oven at 425 degrees for about 20 minutes. Let cool then take the corn off the cobs and add to avocado mix.
