Ingredients
-
1 red and 1 yellow pepper
1 bunch spring onions
1 clove garlic
1 red chilli
1 small bunch parsley (optional)
Salt and freshly ground black pepper
2 x 375g packs ready-rolled puff pastry OR
4 large flour tortillas
200g cream cheese (to bake) OR
200g humus
Directions
Preheat the oven to gas mark 6, 200°C if you are baking. Prepare the filling. Seed and finely dice the peppers and trim and finely slice the onions. Prepare the garlic, chilli and parsley, if using, and finely chop them all together. Mix all the veg with some salt and pepper in a bowl.
Unroll the pastry if using and spread with the cream cheese, then cut each piece into 2 squares. Scatter the filling evenly over the squares, then roll them up firmly. Cut each square into 8 slices and place them, cut side down, on 2 buttered baking sheets. Bake for 15-20 minutes, until golden brown, then cool slightly. Serve upside down, showing the golden baked surface and keeping the colourful filling a surprise.
Alternately, spread the tortillas with the humus, then scatter the filling over and roll up tightly. Trim the ends, then slice each roll into 8. If you make the mini-wraps in advance, wrap the individual rolled tortillas in cling film, then unwrap and slice just before serving.
