Introduction

Ingredients

2 ripe but firm pears
Juice of ˝ a lemon
1 tsp cloves
1 cinnamon stick
2 tbsp each of dried cranberries and raisins
150g Demerara sugar
1 litre cranberry juice
1 litre apple juice
Directions
Dice the pears with the skins on (if not too tough) and toss them in the lemon juice. Set aside for serving.
Place the spices in a large pan with all the remaining ingredients. Stir over a low heat until the sugar has dissolved then continue heating gently for 10 minutes, to allow the flavour of the spices and fruit to develop.
Ladle into mugs and serve with a teaspoonful of diced pear in each cup. Place a long cinnamon stick in each cup as a stirrer if you wish.
