Ingredients

    Soba buckwheat noodles, 12 oz.
    Mixed vegetables of your choice (I like carrots, green & purple cabbage, & brussels sprouts)
    Peanut butter, 1/2 cup
    2 Tbsp. Asian chili sauce
    1 Tbsp. soy sauce
    1 Tbsp. rice vinegar
    1/2 cup water

Directions

Boil water in large pot.
Add soba noodles and cook for 5 minutes.
Drain noodles.

While noodles are cooking, saute veggies in dry covered pan over medium-high heat.

In a bowl, whisk together the peanut butter, chili sauce, soy sauce, vinegar, and water.

Combine the noodles, veggies, and peanut sauce in a serving dish.

Serves 8.
