Introduction

Ingredients

    2 Tbsp peanut oil
    1 medium onion, chopped
    salt
    pepper
    1 Tbsp minced garlic
    1 Tbsp fresh ginger, chopped
    3 Tbsp curry powder
    1 16oz can diced tomatoes
    1 can coconut milk
    4 cups chicken or vegetable stock
    1 cup lentils
    2 medium russet potatoes, peeled and cut into small chunks

Directions

Put oil in soup pot over medium high heat. When hot, add onion, cooking until translucent. Add the garlic and ginger and cook for another minute. Sprinkle with salt and pepper, then stirr in the curry powder. Cook stirring frequently another minute or two. Stir in the tomatoes and lentils, then stock and coconut milk. Bring to a boil. Partially cover, urn heat down to medium-low. Cook until lentils are tender. (about 15 mins).Stir in potatoes and cook another 15 mins. Add carrots and cook 20 mins or until everything is tender.
makes 10 1-cup servings.
