Sweet, spicy pasta dish with no meat!
Number of Servings: 4
Ingredients

1 large (or 2 medium) sweet potatoes, peeled and cut into 3/4 inch cubes - enough for 2 cups
1/2 tsp each sugar, chili powder and cinnamon
8 oz (by weight, not by cup measurement - about 1/2 a box) dried whole wheat rigatoni, penne or rotini pasta
1/3 cup (around 5 tbsp) peanut butter
3 oz fat free cream cheese, cut up
2 tsp asian chili sauce
1 tbsp soy sauce
6 green onions, (around 4 tbsp white onion) thinly sliced
Directions
makes 4 servings, about 1-1/2 to 2 cups each
1) Preheat oven to 450 degrees. Oil a rimmed baking sheet (I used my olive oil sprayer) and set aside. Place sweet potato cubes in a bowl and toss with olive oil, sugar, chili powder and cinnamon until well coated. Spread on prepared pan, bake 20 min or until tender.
2) Meanwhile, cook pasta according to package directions. Drain, reserving 1 cup hot pasta water.
3) In saucepan combine peanut butter, cream cheese, chili sauce and soy sauce. Whisk in 3/4 cup reserved pasta water. Stir over medium heat until heated through. If too thick, add more pasta water. Stir in most of the green onions. Serve sauce over pasta with sweet potatoes and remaining onion as garnish.
