Ingredients

    Chicken 3 boneless skinless thighs
    Canola oil 0.3 cup
    Carrot 1 large finely grated
    Onion 0.5-1 medium diced
    Turmeric ground 2 tsp
    Salt, black pepper to taste
    Cumin ground 1-2 tsp
    Garlic 2-3 cloves
    Water 3.5 cups
    Bay leaf 1

Directions

Brown chicken in oil on medium heat, add grated carrot and diced onions cook for 2-3 minutes, add salt, pepper, turmeric and cumin, add rice and cook for a minute. Pour water and bring to a boil. Add peeled garlic cloves and bay leaf. Adjust seasoning. Reduce heat to low, cover and cook until rice is done.
