Ingredients

    - 500 g chicken thighs or breasts (skinn and bones removed)
    - 420 g lite coconut milk
    - 2 lime leaves
    - 2 fresh chilis
    - 1/2 T red curry paste
    - 1/2 T panang curry paste
    - 1 1/2 T sugar
    - 1 T fish sauce
    - basil leaves for garnish

Directions

1. Pour coconut milk into pot along with red curry, panang curry, lime leaves and bring to a gentle boil for 10 minutes.
2. Add paprika and mix well.
3. Add chicken and turn to high heat. Stir frequently until chicken is cooked through.
4. Add fish sauce, sugar, basil leaves and fresh chilis.
5.Serve with rice or couscous.
