Ingredients

    4 tbsp olive oil
    1 cup sliced Italian zucchini
    1 cup sliced mushrooms
    1 large can whole green chiles
    1 cup diced fresh red tomato
    1 cup low fat shredded Colby Jack cheese
    9 large whole eggs
    1/4 cup 1% milk
    Season Salt
    Medium picante sauce
    1 cup tomato sauce

Directions

Heat Oven to 350 degrees and lightly grease 9 x 13 pan with olive oil
Saute mushrooms and zucchini with olive oil. Line greased pan with chiles that have been sliced open to lay flat. Layer chiles with mushrooms, zucchini, tomatoes, and cheese. In a separate bowl gently beat eggs with milk and season salt and then pour evenly over ingredients. Cover and bake for 20 minutes. Remove cover and top with salsa and tomato sauce, bake uncovered for 5 more minutes. Will make 8 3 inch servings. Can omit salsa and sauce and freeze/refrigerate until ready to reheat with sauce.
