Introduction

This comes from a Basque restaurant in my home town. Its absolutely delicious and really filling. You can add in beans, hot sauce, or dip a sandwhich into this broth. It actually gives cabbage soup a good name! Plus it freezes great so don't worry about the large quantity. This comes from a Basque restaurant in my home town. Ingredients

    1/2 C. Chopped Onion Sauted in cooking spray
    3 oz carrots
    2 sm. Potatoes
    1 Leeks
    1/2 sm head of Cabbage
    1/2 sm can (8 oz) tomato sauce
    1 Tbsp Chicken Base
    1/2 tsp Thyme
    10 c Water
    Salt and Pepper to taste


Directions

Bring water and Chicken Base to a boil.
Add Sauteed onion
Chop all Veggies and add to broth.
Add seasonings and tomato sauce
Simmer 2 hours.

    Very Good
    This was a great recipe, instead of thyme I added basil & cilantro. I added Salsa instead of tomato paste for a spicy flavor. Green beans were another little idea and it came out fantastic. I feel adding the green beans salsa and basil were KEY! - 8/4/11

    I love basic cabbage soup. I would add some bulgar, Pearl barley or TVP for added texture and fiber. Some cumin, red pepper flake and maybe bay leaf to punch it up. - 11/16/10
