Number of Servings: 12

Ingredients

    2 1/2 C coarsely frated, peeled sweet potatoes
    1 each: finely chopped onion, tart cooking apple
    1/2 C raisins
    1 t dried thyme leaves
    1/2 t ground cinnamon
    1/4 t ground nutmeg
    1/2 C All-purpose flour
    1/4 C orange juice
    salt and pepper, to taste
    2 eggs
    1 egg white
    Apple-Cranberry Relish (found in my other recipes)

Directions

1. Mix sweet potatoes, onion, apple, raisins, seasonings, flour, and orange juice in bowl; season to taste with salt and pepper. Mix in eggs and egg white. Pack mixture in greased 7 1/2 x 3 3/4 inch loaf pan. Bake, covered, at 350 degrees until loaf is set, about 1 hour
2. Let stand 10 minutes before serving. Loosen sides of loaf with sharp knife; unmold onto serving plate. Slice loaf and serve with Apple Cranberry Relish (See my other recipes for this one!)
