Ingredients

*Whole Wheat Flour, 1.5 cup
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Cinnamon, ground, 1 tsp
Buttermilk, lowfat, 3/4 cup
*Canola Oil, 3 tbsp
Brown sugar 4 tablespoons ( or just brown sugar)
*Eggland's Best Large Egg, 1 serving
Apples, fresh, 1 cup, finely chopped
Walnuts, .5 cup, chopped
Directions
Preheat oven to 400. Coat 12 cup muffin pans, with cooking spray. or paper cups.
Set asside whole wheat, baking powder, baking soda, cinnamon and salt in medium bowl. Set aside.
In large bowl, combine buttermilk oil, brown sugar splenda, and egg. Stir in the flour mixture until just combined. Do not overmix, Stir in the apple and walnuts.
Evenly divide the batter among the prepared muffin cups, filling them about 2/3 full. Bake for 12 minutes or until a wooden pick inserted in the center of a muffin comes out clean. Cool on a rack for 5 minutes. Remove to rack to cool completely.
