Ingredients

1kg chicken breast, minced
1 large head broccoli
2 firmly packed cups spinach
1 large red onion, finely diced
1 tablespoon olive oil
1 tablespoon ground sage
Iodised salt and cayenne pepper to taste
Directions
Makes 10 serves
Process broccoli and spinach in a food processor until the consistency of large breadcrumbs.
On a low heat warm the olive oil (it is important you don’t heat the olive oil to smoking point), and sweat the red onion until soft and translucent. This caramelises the onion and adds a bit of sweetness to the burgers.
Add to the broccoli mixture the cooked onion, chicken breast, ground sage leaves and the salt and pepper to taste.
Smoosh all the ingredients together until well combined. Don't be alarmed at how green they are, they won't look so green when they are cooked =)
Cook on a low to moderate heat until golden brown on the outside and cooked through to the middle.
Enjoy!! These are great as you can just take one chicken burger for a snack, knowing full well it has lots of green goodness in it.
