Introduction
Based on my grandmother's recipe for turkey enchiladas that my Uncle discovered was a lot less time consuming to combine in a casserole instead of wrapping each enchilada. Because this uses pre-cooked turkey, it makes an excellent Thanksgiving leftover meal! Ingredients

1 15 oz. Can Enchilada Sauce
3/4 Large Onion
2.5 Cups Shredded Cheese
2 Cups Shredded Turkey (Pre-cooked)
18 Corn Tortillas
Directions
Coat casserole dish with non-stick cooking spray, and preheat oven to 350°.
Line the bottom of the pan with 6 corn tortillas and top with 1/3 of the enchilada sauce, turkey, onion, and cheese.
Repeat to make 3 layers of ingredients.
Bake for 45 minutes or until cheese is melted and casserole is heated throughout.
Makes 10 servings.
